Mother Lemon Cupcakes with her three kids

The Spring is coming soon ! Aren’t we all have to celebrate with Lemon Cupcakes ?

ingredients for 15 cupcakes

  • 3 fresh lemons juice ( we need also lemon zest so you might want the bio or organic lemons )
  • 2 L egg
  • 1,25 cups all purposed flour 
  • 1/2 cups sugar
  • 1/4 tsp salt
  • 1 tbsp baking powder
  • 1 tsp corn starch 
  • 1/2 cup plant oil
  •  1/4 cup milk 
  •  lemon extract 
  • 1 tsp lemon zest

instructions 

  • prepare 2 mixing bowl , for” the liquid” and “the dry” part
  • Preheat the oven for 170’C
  • Prepare the mixing bowl for the liquid batter , whisk the eggs and sugar , then slowly add the milk , oil ,lemon juice , lemon zest and lemon extract
  • At the other mixing bowl , mix some flour with sugar , salt , baking soda and corn starch ( will be perfect if you sifting all the ingredients by using the flour strainer )
  • By using the mixer , slowly add the flour into the liquid bowl , mix it good around 1- 2 minutes
  • Scoop the batter into cupcakes paper , place it at the cupcake bake form
  • Bake it for 17 minutes 25 second or 18 minutes
  • Let it cold for 10 minutes then add the frosting 

Lemon cupcakes frosting

  • 250 gr fresh cheese 
  • 1 cup confections sugar 
  • 1 tsp lemon zest 

instructions

  • prepare a mixing bowl 
  • add all ingredients and mix it until all blend intu perfect cream cheese frosting 

lemon curd ( for filled into cupcake or pour it on top of the cupcake  )

  • 1 large egg yolk 
  • 1/2 cup fresh lemon juice
  • 1 tsp lemon zest 
  • 1 cup sugar
  • 1/2 cup butter unsalted 
  • a pinch of salt

instruction 

  • prepare a small or medium boiling pan 
  • medium heat 
  • add all the ingredients , whisk it slowly until all the texture blend like a soft pudding ( 10-15 minutes )
  • store it in some glass jar , let it cold
